Easy Homemade Queso Dip Recipe

Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk
  • 8 ounces cheddar cheese, grated
  • 4 ounces Monterey Jack cheese, grated
  • 1/2 cup diced tomatoes with green chilies (like Rotel)
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon cumin

Instructions:

  1. Melt the Butter: In a medium saucepan, melt the butter over medium heat.
  2. Add Flour: Sprinkle the flour over the melted butter, whisking to combine into a smooth paste. Continue to cook for about 1 minute, whisking constantly.
  3. Combine Milk: Gradually add the milk to the flour mixture, whisking continuously. Cook over medium heat until the mixture thickens and starts to bubble, about 5 minutes.
  4. Cheese: Lower the heat to medium-low and gradually stir in the grated cheeses until completely melted.
  5. Add Flavorings: Stir in the diced tomatoes with green chilies, salt, chili powder, and cumin. Mix well until everything is hot and well blended.
  6. Serve Warm: Transfer to a serving bowl and serve warm with tortilla chips, fresh vegetables, or over your favorite nachos.
