Pickled Red Onions

Ingredients:

  • 1 medium red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1 cup hot water
  • Optional flavorings: 1 garlic clove (halved), 1 teaspoon black peppercorns, 1 small dried chili, or a few sprigs of fresh herbs (such as thyme, rosemary, or dill)

Instructions:

  1. Prepare the Onions: Thinly slice the red onion and place the rings in a jar or a bowl.
  2. Mix Pickling Solution: In a measuring cup, combine apple cider vinegar, sugar, and salt with the hot water. Stir until the sugar and salt have dissolved completely.
  3. Add Flavorings (optional): If you’re using any optional flavorings, add them to the jar with the onions.
  4. Combine and Shake: Pour the pickling solution over the onions, ensuring they are fully submerged in the liquid. If necessary, use a spoon to press the onions down.
  5. Let it Rest: Allow the onions to sit in the pickling solution at room temperature for about 1 hour. Afterwards, if you’re not using them immediately, cover and refrigerate.
  6. Ready to Enjoy: Your pickled red onions will be ready to use after they’ve pickled for an hour and will last for several weeks refrigerated.

Serve your pickled red onions on tacos, burgers, salads, or as a zesty addition to any dish that could use a tangy crunch. Enjoy!
