  • 1 bunch of fresh kale, stems removed and leaves torn into bite-sized pieces
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/3 cup pumpkin seeds, toasted
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese, shaved (optional for topping)

Instructions:

  1. Begin by preparing the kale. After removing the stems and tearing the leaves, place them in a large salad bowl. Sprinkle a pinch of salt and massage the kale with your hands for about 2-3 minutes until the leaves start to soften and wilt.
