Roasted Carrots Recipe

Ingredients

  • 1 lb carrots, peeled and sliced into 1/4 inch pieces
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional herbs: thyme, rosemary

Instructions

  1. Preheat the oven to 400°F (205°C).
  2. Place the sliced carrots on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt, pepper, and optional herbs.
  4. Toss everything together to ensure the carrots are well-coated.
  5. Spread the carrots in a single layer on the baking sheet.
  6. Roast in the oven for 20-25 minutes, or until the carrots are tender and slightly caramelized.
  7. Serve warm as a side dish.
